Sugar Free Cake
| Serves: 6-10 people |

Ingredients:
1½ cups buttermilk
1 cup organic rolled oats
1 cup whole-wheat flour
½ cup unbleached self raising flour
1¼ teaspoons baking powder
1 cup finely chopped dates
100g apple sauce (make sure there is no added sugar)
Ground cinnamon to taste
¼ cup roughly chopped walnuts
2 tablespoons sultanas
¼ cup honey (optional, only if you like a sweeter cake)
Preparation Instructions:
- Combine the buttermilk and rolled oats in a bowl and set aside for 15-20 minutes until the oats have softened.
- While the buttermilk and oats are standing, pre-heat your oven to 180°C and line a standard baking tin with greaseproof paper.
- Add the dates to the buttermilk mixture and mix well to ensure the dates are evenly distributed and not clumped together.
- Add the remaining ingredients and mix well.
- Transfer the solid batter into a standard baking tin. Using a wooden spoon, spread the batter to even it out.
- Sprinkle the cake with roughly chopped walnuts and sultanas and let it sit for 20 minutes before baking.
- Bake cake for approximately 1 hour or until a skewer inserted into the cake comes out clean.
Serving Suggestion:
This cake tastes really good with a cup of Earl Grey Green Tea for additional health benefits. Another way to serve this delicious cake is to add a dollop of apple sauce (make sure there is no added sugar), topped with some toasted coconut curls or almond flakes for extra moisture and flavor.
