Sugar Free Cake

Serves: 6-10 people Preparation Time: 20-30 minutes Cooking Time: 1 hour

Ingredients:

1½ cups buttermilk
1 cup organic rolled oats
1 cup whole-wheat flour
½ cup unbleached self raising flour
1¼ teaspoons baking powder
1 cup finely chopped dates
100g apple sauce (make sure there is no added sugar)
Ground cinnamon to taste
¼ cup roughly chopped walnuts
2 tablespoons sultanas
¼ cup honey (optional, only if you like a sweeter cake)

Preparation Instructions:

  1. Combine the buttermilk and rolled oats in a bowl and set aside for 15-20 minutes until the oats have softened.
  2. While the buttermilk and oats are standing, pre-heat your oven to 180°C and line a standard baking tin with greaseproof paper.
  3. Add the dates to the buttermilk mixture and mix well to ensure the dates are evenly distributed and not clumped together.
  4. Add the remaining ingredients and mix well.
  5. Transfer the solid batter into a standard baking tin. Using a wooden spoon, spread the batter to even it out.
  6. Sprinkle the cake with roughly chopped walnuts and sultanas and let it sit for 20 minutes before baking.
  7. Bake cake for approximately 1 hour or until a skewer inserted into the cake comes out clean.

Serving Suggestion:

This cake tastes really good with a cup of Earl Grey Green Tea for additional health benefits. Another way to serve this delicious cake is to add a dollop of apple sauce (make sure there is no added sugar), topped with some toasted coconut curls or almond flakes for extra moisture and flavor.
