Chilli Dhal

Ingredients:
2 onions (finely chopped)
375g red lentils (washed and drained)
1 tsp cumin (ground)
3 tsp hot curry paste (hotness according to taste)
4½ cups water
2 tomatoes (chopped)
Salt & Pepper to taste
Preparation Instructions:
- Fry onions in heavy based pan until golden.
- Add lentils, cumin and curry paste and cook for 1 to 2 minutes.
- Add water and simmer uncovered about 20 minutes or until all liquid is almost absorbed.
- Stir in the tomatoes and season with salt & pepper and cook for a further 5 minutes.
Serving Suggestions:
Serve with your choice of brown rice, parathas or chapatis for complete protein. Also make sure to serve something like a raita to provide some coolness. Make raita by mixing cucumbers, garlic, coriander and yoghurt in whatever proportions you prefer.
