"ALT" Sandwich
| Makes: 2 Sandwiches |

Ingredients:
½ avocado
3 lettuce leaves
1 Large tomato
4 Slices wholegrain bread
2 tsp olive oil mayonnaise
Salt & pepper to taste (optional)
Preparation Instructions:
- Peel and slice the avocado.
- Wash the lettuce and shred finely.
- Wash and slice the tomato.
- Lightly toast the bread slices and allow to cool.
- Spread ½ tsp of mayonnaise onto each slice of bread.
- Take 2 slices of the bread slices and divide the shredded lettuce evenly on top.
- Place tomato slices on top of the lettuce.
- Place avocado slices on top of the tomatoes.
- Sprinkle with salt and pepper if desired.
- Place the remaining slices of bread on top.
- Serve as suggested.
Serving Suggestions:
Serve with a Banana Smoothie made from 1 cup bio-dynamic milk, 1 banana and 1 tablespoon LSA Mix. LSA stands for Linseed, Sunflower and Almond and can be purchased at most health food retailers - you may also be able to buy it in the health food isle of some larger supermarkets. Try to buy LSA refrigerated whenever possible.
