"ALT" Sandwich

Makes: 2 Sandwiches Preparation Time: 7 minutes Cooking Time: 1 minute

Ingredients:

½ avocado
3 lettuce leaves
1 Large tomato
4 Slices wholegrain bread
2 tsp olive oil mayonnaise
Salt & pepper to taste (optional)

Preparation Instructions:

  1. Peel and slice the avocado.

  2. Wash the lettuce and shred finely.

  3. Wash and slice the tomato.

  4. Lightly toast the bread slices and allow to cool.

  5. Spread ½ tsp of mayonnaise onto each slice of bread.

  6. Take 2 slices of the bread slices and divide the shredded lettuce evenly on top.

  7. Place tomato slices on top of the lettuce.

  8. Place avocado slices on top of the tomatoes.

  9. Sprinkle with salt and pepper if desired.

  10. Place the remaining slices of bread on top.

  11. Serve as suggested.
Serving Suggestions:

Serve with a Banana Smoothie made from 1 cup bio-dynamic milk, 1 banana and 1 tablespoon LSA Mix. LSA stands for Linseed, Sunflower and Almond and can be purchased at most health food retailers - you may also be able to buy it in the health food isle of some larger supermarkets. Try to buy LSA refrigerated whenever possible.

* Avocado is rich in calcium, magnesium, phosphorus, sodium, potassium, vitamin B1, biotin, folic acid & will help reduce cholesterol & protect you from weight gain.
* Leafy green vegetables like lettuce are a good source of calcium and folic acid which prevents certain birth defects
* Tomatoes are rich in lycopene which protects against certain types of cancers.
