Oaty Pancakes

Serves: 4 People Preparation Time: 5 minutes Cooking Time: 7 minutes

Ingredients:

¾ cup organic rolled oats
¾ cup soya milk
½ cup organic plain flour
2 tsp baking powder
½ tsp salt
1 tbsp pear juice concentrate
1 free-range egg

Preparation Instructions:

  1. Put oats into a bowl and pour the soya milk over the oats. Leave to soak for 5 minutes.
  2. During this time, sift the flour, baking powder and salt into a separate bowl.
  3. Add the egg, pear juice concentrate and the oat & soya milk mixture to the sifted ingredients. Mix until combined.
  4. Heat a non-stick frying pan or gridle
  5. .

  6. Pour ¼ cup of the mixture onto the gridle and turn when the top starts to bubble.
  7. Repeat with remaining mixture.
  8. Serve with fresh soft fruits or as suggested for a real tasty and energising morning treat.

Serving Suggestions:

Serve with fresh, organic strawberries and a drizzle of organic honey or maple syrup. Also include freshly squeezed juice of oranges and apples. In addition to using other berries like blueberries and raspberries, these pancakes also taste great with apricots, pears and peaches.
