Bran Buttermilk Muffins

Makes: About 20 Muffins Preparation Time: 10 minutes Cooking Time: 18-20 minutes

Ingredients:

1½ cups Unprocessed Bran
2 tsp Grated Orange Peel
1 egg
¼ cup Vegetable Oil
1½ tsp treacle
1½ tsp honey
1 cup Buttermilk
½ cup Boiling Water
½ cup Sultanas
1¼ cups Wholewheat Plain Flour
1 tsp Cinnamon
¾ tsp Bicarbonate of Soda
¾ tsp Baking Powder
¼ tsp Salt

Preparation Instructions:

  1. Combine ½ cup bran and all of the boiling water together with the orange peel, then set aside.

  2. In another bowl, beat the egg lightly with electric mixer.

  3. Add oil, treacle, honey and buttermilk to the egg and mix well.

  4. To the above mixture, add the remaining bran, the bran/water mixture and the sultanas and mix with a wooden spoon.

  5. Combine the remaining ingredients and add to the bran mixture. Stir with wooden spoon until just combined (Do not over mix).

  6. Spoon into non-stick muffin trays, filling three quarters only.

  7. Bake at 190°C for 18-20 minutes or until done, then cool on a wire rack.

Serving Suggestions:

Serve with a cup of organic coffee and 100% fruit spread. If you're responsible for feeding people who are finicky about eating healthy stuff, this is a tasty way to get them to eat more roughage in their diet without them knowing it's good for them. You can replace the sultanas in the recipe with any fruit you have to give the muffins a different taste and texture.
