Easy Split Pea Soup
| Serves: 4-6 people |
Preparation Time: 10-15 minutes |
Cooking Time: 40-60 minutes |
Ingredients:
1 cup yellow split peas
½ cup red lentils
5 cups water
2 large onions (roughly chopped)
3 sticks celery (roughly chopped)
2 carrots (roughly chopped)
1 clove garlic (crushed)
1 bay leaf
1 tsp oregano
Salt and pepper to taste
Preparation Instructions:
- Bring the split peas, lentils and water to the boil.
- Add the garlic and herbs together with the chopped vegetables and stir through.
- Reduce the heat and simmer for about 40 minutes to an hour or until split peas are soft.
- Remove bay leaf and season, then puree the mixture in a blender or food processor.
Note:
A stick blender is ideal for this recipe as you can puree the mixture in the cooking pan. Just make sure that you are careful with the blender so as not to create a spray during processing as the soup will be hot and can burn.
Serving Suggestions:
Serve on a cold winter night with some crusty bread for a satisfying and low fat dinner.
